I agree about of the importance of preserving native food cultures, but dining choices in Rome would be limited without immigrants in the kitchens. As in North America, fewer native locals want that work. Chef Eric, who speaks fluent Italian, joins a long line of foreign-born Romans--including the emperors Hadrian (from Spain) and Septimus Severus (from Africa), among many others. Rather than appropriating Italian cuisine, I would argue that Italy has appropriated him.
